This breakfast casserole is perfect for lazy mornings, family brunches, or even holidays. By combining milk, salsa, eggs, cheese, and tortilla chips, this casserole has a cheesy, crunchy, fresh flavor that can’t be matched.

Ingredients

  • 1 dozen (12) eggs
  • 1 cup whole or 2% milk
  • ½ jar (24 oz) Member’s Mark Fresh Salsa
  • 3 cups tortilla chips or strips
  • 2 cups shredded extra sharp cheddar cheese
  • ½ cup halved cherry tomatoes or finely chopped bell peppers
  • 1 ¼ teaspoon (tsp) salt
  • Sour cream (garnish)
  • Tortilla chips (garnish)

Preparation

Preheat your oven to 350°F. Grease a 9×9 or 9×13 baking dish with cooking spray or butter.

Whisk together the eggs, milk, and salt in a large bowl with all but ⅓ cup of the salsa. Slowly stir in the cheese, then gently fold in the tortilla chips until they’re fully coated with the egg mixture. Let sit for 3-4 minutes to soften.

Pour the mixture into the baking dish, flattening the chips so that they remain covered in egg mixture (any exposed edges will harden and brown). Bake at 350°F for 50-55 minutes, until a knife or skewer inserted into the center comes out clean. Let the casserole sit for 5-10 minutes before serving. Serve with the remaining salsa on the side, along with sour cream and tortilla chips.

 

Salsa Scrambled Eggs

These simple scrambled eggs combine sharp cheddar and fresh salsa for a cheesy texture and layered flavor. Whether you serve these eggs in tortillas or eat them plain, they’re sure to be a crowd-pleaser.

Ingredients

  • 4 large eggs
  • ¼ cup shredded sharp cheddar cheese
  • ¼ cup Member’s Mark Fresh Salsa
  • 2 warmed corn or flour tortillas or tortilla chips (optional)
  • 1 tsp chili powder (optional)

Preparation

Beat the eggs with the chili powder in a small or medium-sized bowl. Coat a non-stick skillet with butter or cooking spray and heat on medium.

Begin cooking the eggs, stirring them slowly with a spatula. Once they’ve begun to firm, stir in the cheese and salsa. Spoon onto tortillas and serve.

Breakfast Burritos with Salsa

These breakfast burritos are quick, versatile, and even freezable—make them ahead of time, wrap, and freeze them for an easy on-the-go breakfast. The ingredients are easily scalable to allow you to make just a few or an entire freezer’s worth! With potatoes, refried beans, eggs, milk, and salsa, these burritos pack a nutritional punch that can keep you satisfied for hours.

Preparation

Prepare the frozen potatoes according to the package instructions (generally cooking them in a skillet over medium heat until fully thawed and warm). If you’re using fresh potatoes, dice and microwave the potatoes for 4-5 minutes to soften them before mixing them into the bacon drippings.

In a medium bowl, mix together the eggs, salt and pepper, and milk until fully combined. Pour into a greased skillet over medium heat, stirring regularly until the eggs are set.

Cook the bacon, reserving about ¼ cup of drippings for the potatoes. Remove and drain the bacon, then put the potatoes in the pan on medium heat, tossing occasionally until the sides are browned.

Open the refried beans and heat by microwaving for 1 to 2 minutes or heating on the stovetop over medium-low heat.

Assemble the burritos by spreading a heaping spoonful of the refried beans down the center of each burrito, then topping with eggs, cheese, potatoes, bacon, and salsa. Roll the burritos and serve immediately—or wrap them in wax paper and freeze for up to six months.
